Dried longan pulp — 桂圓 / 龙眼肉 (Gui Yuan), also known as dried longan flesh — is the dried flesh of the longan fruit, used in Chinese cooking for its rich, caramel-like sweetness. It is a popular ingredient in Chinese sweet soups (tong sui), tea-style infusions, desserts and slow-cooked recipes, and pairs naturally with red dates, goji berries and other classic Chinese soup ingredients.
