Hawthorn fruit — 山楂 (Shan Zha) — is a dried fruit with a bright, sour-sweet flavour used widely across Chinese cooking. Its distinctive tartness makes it a useful ingredient in braised meat dishes — particularly pork and lamb — where it adds flavour contrast and balances rich flavours. It is also used in Chinese-style soups and broths, sweet soups (tong sui), tea infusions, and everyday pantry cooking.
