Green Sichuan peppercorn — 青花椒 (Qing Hua Jiao) — is the unripe, green-harvested version of Sichuan peppercorn, with a fresher, more intensely floral and citrus-forward character compared to the riper red variety (花椒). It delivers the same distinctive numbing-tingling sensation (麻) but with a brighter, more aromatic profile. Green Sichuan peppercorn has become increasingly popular in modern Sichuan and Chongqing cooking, particularly in dishes such as green mala fish (青花椒魚) and fresh-style Sichuan stir-fries.
This Xianyitang pack contains 100% dried green Sichuan peppercorn, produced under an ISO 9001-certified quality management system. Use whole in oil-infused spice bases, or toast lightly and grind. Can be substituted for red Sichuan peppercorn where a fresher, more floral flavour is preferred.
Typical uses: Green mala dishes, Sichuan-style fish and chicken, hot pot, chilli oil, stir-fries and marinades.
