Sweet almonds — 甜杏仁 (Tian Xing Ren) — are a classic ingredient in Chinese sweet soups and desserts. They have a mild, nutty sweetness and are traditionally used in Chinese almond soup (杏仁糊) and other almond-based desserts. They are also used in light everyday broths, often paired with other beans and seeds for a mildly sweet soup base.
