Dried bay leaves — 香葉 (Xiang Ye) — are aromatic cooking leaves used in Chinese and broader Asian cooking. Their warm, subtly bitter fragrance is a familiar background note in Chinese master stock, braised dishes, red-cooked meat, soups and stews.
