Chanterelle mushroom — 雞油菌 (Ji You Jun) — is a prized mushroom known for its distinctive fruity-apricot aroma and delicate, mildly peppery flavour. The name 雞油菌 literally means 'chicken fat mushroom', a reference to its golden-yellow colour and smooth, rich texture. Dried chanterelles have a more concentrated flavour than fresh, making them well-suited to slow-cooked soups, stir-fries, egg dishes and braises.
This Xianyitang pack contains 100% dried chanterelle mushroom, produced under an ISO 9001-certified quality management system. Rinse thoroughly and soak in warm water for 15–30 minutes before use. Add to soups and broths, stir-fries, egg dishes or slow-cooked recipes. Use the soaking water as additional stock where desired.
Typical uses: Chinese soups and broths, stir-fries, scrambled egg dishes, slow-cooked recipes, rice dishes.
Goes well with: Egg, garlic, ginger, spring onion, pork, chicken, soy sauce, sesame oil, rice wine.
