Dried Chinese yam — 山藥 / 淮山 (Shan Yao) — is a mild, starchy root ingredient used extensively across Chinese cooking. Neutral in flavour and easy to combine with other ingredients, it is a natural addition to herbal soups, broths, congee and slow-cooked dishes. It is one of the most frequently used roots in Chinese pantry cooking, pairing naturally with astragalus (黃芪), codonopsis (黨參), poria (茯苓) and other classic herbal soup ingredients.
