Dried lettuce stem — 貢菜 (Gong Cai), also known as stem lettuce or asparagus lettuce — is made from the thick stem of the lettuce plant, which is dried to concentrate its flavour and extend its shelf life. When soaked and rehydrated, it has a satisfying crisp bite and a clean, fresh flavour. It is widely used in Chinese cold dishes (涼拌), stir-fries and soups, and is particularly popular in Sichuan and Hunan home cooking.
This Xianyitang pack contains 100% dried lettuce stem, produced under an ISO 9001-certified quality management system. Rinse thoroughly and soak in cold water for 20–30 minutes before use. For cold dishes: drain well and toss with your preferred dressing. For stir-fries: add to the pan and toss briefly over high heat. For soups: add during simmering.
Typical uses: Chinese cold dishes (涼拌), stir-fries, soups and broths, everyday pantry cooking.
