Dried Chinese cabbage — 白菜幹 (Bai Cai Gan), also known as dried Chinese leaf — is a sun-dried vegetable widely used in Cantonese home cooking. Drying concentrates the natural sweetness of the vegetable and gives it a pleasantly soft, slightly chewy texture after rehydrating. It is commonly added to long-simmered soups with pork ribs, and works well in braised dishes and everyday stir-fries.
