Cowpeas — 眉豆 (Méi Dòu), also known as black-eyed beans or black-eyed peas — are a pale, cream-coloured pulse with a distinctive dark curved marking. They have a mild, earthy flavour and a soft, slightly creamy texture when cooked, and are a long-established ingredient in Cantonese home cooking. In Chinese cuisine they are most commonly used in slow-cooked soups, simmered with pork ribs or pork belly, and added to congee.
This Xianyitang pack contains 100% dried cowpeas, produced under an ISO 9001-certified quality management system. Rinse thoroughly before use; soak in cold water for 1–2 hours if desired to reduce cooking time. Add to soups or stews and cook until soft, or simmer separately until tender and use in congee or other dishes.
Typical uses: Cantonese soups and broths, pork rib and cowpea soup, congee and porridge, slow-cooked stews.
Goes well with: Pork ribs, pork belly, dried squid, peanuts, red dates (大棗), ginger, salt fish (鹹魚).
