Astragalus root — 黃芪 (Huang Qi) — is a dried root widely used in Chinese cooking as a foundational ingredient in herbal soups and broths. With a mild, subtly sweet flavour, it adds body and depth to slow-cooked recipes without overpowering other ingredients. It is one of the most commonly used roots in Chinese herbal soup recipes, often appearing alongside codonopsis (黨參), angelica root (當歸) and red dates.
