Sichuan peppercorn — 花椒 (Hua Jiao) — is the defining spice of Sichuan cuisine, famous for its unique numbing, tingling sensation (麻, má) that is quite unlike the heat of chilli or conventional pepper. Alongside dried chilli, it forms the basis of the celebrated mala (麻辣) flavour profile. It has a distinctly citrus-floral fragrance with resinous, woody notes. Sichuan peppercorn is essential in mapo tofu (麻婆豆腐), dan dan noodles, dry-fried dishes, braised meats and chilli oil, and is widely used throughout Chinese cooking wherever the mala flavour is called for.
This Xianyitang pack contains 100% dried Sichuan peppercorn, produced under an ISO 9001-certified quality management system. Use whole in oil-infused spice bases and braised dishes, or toast lightly in a dry pan and grind for a more intense flavour. Remove whole peppercorns before serving where preferred.
Typical uses: Mapo tofu, mala hot pot and stir-fries, chilli oil, braised meats, dry-fried dishes, spice blends and marinades.
