Suggested use
Pick over and rinse thoroughly before cooking. Soak as appropriate for the bean, recipe and cooking method, then cook thoroughly until the beans are fully cooked and soft throughout. Do not eat dried beans raw or undercooked; soaking does not replace cooking. Suitable for soups and braised dishes. Homemade soy milk must also be fully boiled and cooked according to the recipe before drinking.
Dried soybeans — 黃豆 (Huang Dou) — are one of the most widely used ingredients in Chinese cooking. Used whole in slow-cooked soups and broths, they add a gentle, creamy richness and a mildly nutty flavour. Soybeans are a classic pairing with pork ribs in Cantonese-style soups, and are also used in congee, braised dishes and as the base for homemade soy milk (豆漿).
