Peeled mung beans — also known as dehulled mung beans — 去皮綠豆 (Lü Dou) are whole mung beans with the green hull removed, revealing the pale yellow interior. Compared to whole mung beans with their skins on, they cook faster and break down more readily into a smooth, creamy texture, making them particularly well-suited to mung bean sweet soup (綠豆湯), mung bean paste (綠豆沙) and congee. They have a mild, slightly earthy, subtly sweet flavour and pair well with both sweet and savoury ingredients.
This Xianyitang pack contains 100% dried peeled mung beans, produced under an ISO 9001-certified quality management system. Rinse thoroughly before use. For mung bean sweet soup, simmer in water with rock sugar until soft and creamy. For savoury use, add to soups, broths or congee alongside meat and other ingredients.
Typical uses: Mung bean sweet soup (綠豆湯), mung bean paste (綠豆沙), mung bean cake (綠豆糕), sticky rice dumplings (粽子), congee and porridge, savoury soups and broths.
Goes well with: Rock sugar, red dates (大棗), coix seeds (薏苡仁), poria (茯苓), lily bulb (百合), kelp (海帶), pork ribs.
