Dried bird's eye chilli — 辣椒 (Là Jiāo), specifically the small facing heaven variety (小朝天辣) — are intensely hot dried chillies widely used in Chinese cooking. Their fiery heat and deep chilli flavour are central to Sichuan cuisine, where they feature in dishes such as Kung Pao chicken (宮保雞丁), Sichuan chilli oil (紅油), mapo tofu (麻婆豆腐) and braised fish. They are also used in stir-fries, pickles and spice blends across Chinese regional cuisines.
This Xianyitang pack contains 100% dried bird's eye chilli, produced under an ISO 9001-certified quality management system. Use whole chillies in oil-based cooking to release their heat and flavour, or crush and grind for use in dry spice blends and chilli oil.
