Tsaoko cardamom — 草果 (Cao Guo), sometimes referred to in English as Chinese black cardamom — is a large aromatic spice pod from the ginger family with a distinctive smoky, camphor-like fragrance and notes of eucalyptus and cloves. It is quite different from the South Asian black cardamom (Amomum subulatum) and from green cardamom, and should not be substituted for either. In Chinese cooking, tsaoko cardamom is an essential spice in braised and slow-cooked dishes — red-braised pork (紅燒肉), braised beef and lamb, braised offal, and spice blends for marinated and lu shui (滷水) recipes. It is widely used in Yunnan and Sichuan cuisines and in Chinese restaurant-style braise bases.
This Xianyitang pack contains 100% dried tsaoko cardamom, produced under an ISO 9001-certified quality management system. Use whole or lightly crushed to release more aroma. Add to braised dishes, stews and stocks at the start of cooking and remove before serving.
Typical uses: Chinese braised meats and offal, lu shui spice blends, beef and lamb stews, slow-cooked broths and stocks.
