Suggested use
Rinse thoroughly. Cover with cold water and soak in the refrigerator, preferably overnight, until fully rehydrated and soft through the centre. Large, thick caps may need longer; check the centre before cooking. Trim tough stems as needed, then braise, steam, stir-fry or simmer until thoroughly cooked. Do not eat raw or only soaked. Use promptly after soaking and keep refrigerated until cooking.
What are large flower shiitake mushrooms?
These are dried shiitake mushrooms with naturally patterned caps, known in Chinese as 大花菇. The dried caps are approximately 8–10 cm in diameter, with natural variation between mushrooms. Each pack contains 200 g. The size-reference photograph shows the actual dried product beside a ruler.
What flavour and texture can I expect?
Flavour: Large flower shiitake brings a rich mushroom aroma, a woodsy character and savoury umami. This makes it a good choice when you want the mushroom flavour to be part of the dish, in a chicken broth, a braise or a whole stuffed mushroom.
Bite and pairing: Fully rehydrated and cooked broad caps have a substantial, meaty bite. Braising can make them smooth and tender. Pair with oyster sauce, ginger and garlic for a savoury braise, or pork and prawns in a stuffed mushroom dish. Prepare until soft through the centre before cooking; the finished texture depends on preparation.
Presentation ideas
The natural flower-like pattern is a feature of the dried caps. For serving, keep the broad caps whole in braised or stuffed mushroom dishes so they can be a focal point on the plate. Pair with green pak choi for a contrast between dark mushrooms and green leaves. Natural caps vary in size and pattern, and cooking and sauces can change their appearance.
What can I cook with them?
Keep the broad caps whole for braised shiitake with pak choi, or use them for stuffed pork or prawn mushroom dishes. Slice fully rehydrated mushrooms for chicken casseroles, soups or rice dishes. For a smaller pack of everyday dried shiitake, compare the 90 g product below.
