Termite mushroom — 雞樅菌 (Ji Zong Jun) — is a highly prized mushroom native to Yunnan Province and other parts of southern China, where it grows in association with termite mounds. Its Chinese name literally means 'chicken mushroom', reflecting its characteristically mild, delicate umami flavour with subtle chicken-like notes. It is considered one of the finest mushrooms in Chinese cuisine and a celebrated speciality in Yunnan cooking.
This Xianyitang pack contains 100% dried termite mushroom, produced under an ISO 9001-certified quality management system. Rinse thoroughly and soak in warm water for 15–30 minutes before use. Add to soups and broths, stir-fries, hot pot, or use as a flavourful base for slow-cooked dishes. Use the soaking water as additional stock where desired.
Typical uses: Chinese soups and broths, slow-cooked dishes, stir-fries, hot pot, Yunnan-style cooking.
Goes well with: Pork, chicken, ginger, spring onion, garlic, soy sauce, rice wine, vermicelli noodles.
