White pepper — 白胡椒 (Bai Hu Jiao) — is black pepper with the outer husk removed, producing a spice with a milder, smoother heat and a cleaner, more delicate flavour than black pepper. It is one of the most widely used spices in Chinese cooking and is particularly favoured in Cantonese and Shanghainese cuisine. White pepper is an essential seasoning in Chinese soups and broths, Cantonese-style congee and wonton soup, and is used in stir-fries, marinades and everyday household cooking throughout China.
