Suggested use

Jade Wood Ear — 玉木耳 — is a white variety of wood ear fungus, named for its milky jade-white colour and translucent appearance. Unlike black wood ear (黑木耳), which has thinner flesh and a softer, more pliable texture, Jade Wood Ear has notably thick, rootless flesh — no hard stem or tough strands — giving it a distinctive crisp and bouncy texture that holds up even through extended cooking. This makes it well suited to long-simmered soups and broths, as well as cold-dressed dishes and stir-fries.
With its naturally gelatinous texture and satisfying bite, Jade Wood Ear readily absorbs surrounding flavours during cooking while keeping its crisp character. It is sometimes described in Chinese cooking as 素中之葷 — a plant-based ingredient valued for its substantial, satisfying texture.
